I am loving the colours in this recipe, but the blueberries don’t only create a lovely purple tint they also bring a slight sweetness to the coconut which pairs wonderfully. Whilst blending up coconut chips instead of using plain desiccated coconut brings a bit more texture to the bites, more bite to the bite you could say! And better yet they are super speedy to make, easy to store and an absolute crowd pleaser (which is more than you can say for the classic Bounty at the bottom of the Celebrations tin at Christmas!)

INGREDIENTS:
- 1/3 cup blueberries
- 3/4 cup coconut chips
- 100g dark chocolate
METHOD:
- In a blender, pulse the coconut chips into a coarse grain before placing into a bowl
- Blend the blueberries to form a coulis
- Mix together the blueberries & coconut
- Press the mixture into a 1 tbsp measure to form half-sphere shapes
- Freeze for 20-30 minutes
- Coat in dark chocolate and top with coconut chips
- Chill
- Devour
