Oat biscuits are a biscuit tin staple, so of course I had to put a little twist on them. Coconut lightens the flavour of this bake so well to create a biscuit full of flavour and are ridiculously moorish!


  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 1 cup oats blended into a flour
  • 1 tsp baking powder
  • 1 cup jumbo oats
  • 2 tsp chia seeds
  • 1 tsp cashew butter
  • 1/2 cup coconut chips coarsely blended
  • 2-4 tbsp oat milk


  1. In a saucepan, melt together the butter and sugar
  2. Remove from the heat before mixing in the dry ingredients
  3. Mix in oat milk
  4. Roll into balls and flatten with the back of a fork
  5. Bake at 180oC for 10-12 minutes until the edges have slightly browned
  6. Finish with melted dark chocolate
