Oat biscuits are a biscuit tin staple, so of course I had to put a little twist on them. Coconut lightens the flavour of this bake so well to create a biscuit full of flavour and are ridiculously moorish!
INGREDIENTS:
- 1/2 cup butter
- 1/3 cup brown sugar
- 1 cup oats blended into a flour
- 1 tsp baking powder
- 1 cup jumbo oats
- 2 tsp chia seeds
- 1 tsp cashew butter
- 1/2 cup coconut chips coarsely blended
- 2-4 tbsp oat milk
METHOD:
- In a saucepan, melt together the butter and sugar
- Remove from the heat before mixing in the dry ingredients
- Mix in oat milk
- Roll into balls and flatten with the back of a fork
- Bake at 180oC for 10-12 minutes until the edges have slightly browned
- Finish with melted dark chocolate
