STRAWBERRY & OAT COOKIES

After some weekend baking inspo? Or just some inspo for which flavour biscuit to buy at the local cafe this afternoon? Then look no further!
My brain was not switched on when I started making the mix for these and it decided to add an egg into the mixture as if I was making a cake. I have no idea where the thought came from but it actually worked v well.
So well in fact that I managed to eat 4 of these in one sitting straight after they came out of the fridge
(so no, this isn’t a picture of the entire batch, sorry!)

INGREDIENTS:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1 cup oats blended into a flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup jumbo oats
  • Handful fresh strawberries diced up
  • Optional: some cacao nibs and freeze dried strawberries

METHOD:

  1. Cream together the butter and sugar before whisking in the egg
  2. Blend up the oats, baking powder and salt into a flour before folding into the wet mixture 
  3. Mix in the jumbo oats
  4. Fold in the strawberries and optional chocolate 
  5. Form into tbsp size balls and place on a baking tray before slightly pressing the tops down 
  6. Bake at 180•C for around 20 minutes until golden brown 
  7. Leave to cool on the baking tray for 10 minutes to harden them before transferring to a wire cooling wrack
