BASIL & KALE SAVOURY PANCAKES

Who else is pumped for Shrove Tuesday tomorrow? 
Traditionally it’s to use up all the tempting foods in your cupboard before lent, but let’s face it, we all go and buy ingredients especially for the occasion! Anyway, I’ve always been a savoury pancake gal (gimme that cheese, marmite & more cheese) so here is something to mix up your normal pancake recipe.

INGREDIENTS:

  • 2 cups of oats, blended into a flour
  • 1.5tsp baking powder
  • 2 eggs 
  • 1 cup milk
  • 1/2 tsp wholegrain mustard
  • Handful of fresh basil finely chopped
  • 1 garlic clove finely chopped 
  • S+P & mixed herbs 
  • 1/2 tsp cayenne pepper
  • 2 Large stalks of kale, whizzed into tiny pieces (or 2 handfuls fresh spinach, or neither!)

METHOD:

  1. In a bowl mix together the dry ingredients and herbs
  2. Add the egg and milk and whisk into a smooth mixture
  3. Whizz up the greens, add them to the mixture with the mustard, and more seasoning to suit your preference.
  4. Heat a frying pan with a tiny splash of olive oil
  5. Spoon the mixture into small or huge dollops depending on what you like
  6. Cook for 1-2 minutes until golden brown on each side.
  7. Serve with all of your favourite toppings – I have one set of stewed tomatoes & the other grilled asparagus & halloumi
