As per usual, I have adapted last night’s leftovers to create today’s lunchbox. So for once I have written down the recipe so you can make it as meal prep for the week. Mix it up by serving with mixed grains, rice or quinoa instead of couscous so you trick yourself into thinking you are eating a different meal each time!


  1. In a pan cook together 1 clove garlic, 1/2 onion, 1/2 pepper, 1/4 large aubergine (and any other veg you have lying around in your fridge
  2. Sauté until soft
  3. Add in 1 tin of chopped tomatoes
  4. Add 1 tin of mixed beans
  5. Season with paprika, smoked paprika, ground coriander, S+P
  6. Box up with a dollop of avocado and couscous mixed with some lemon zest & salt
