If you’re entertaining this weekend, or just want something to batch cook & feed yourself for days, I present to you the smokey whole roasted cauliflower. You guys have been asking about this recipe since I made it for a dinner party a few weeks back, so thought I’d give you an early weekend treat. You’re welcome!

Ingredients:
- 1 cauliflower
- Olive oil
- Cayenne pepper
- Smoked paprika
- Paprika
- Turmeric
- Cumin
- Salt + Pepper
Method:
1. Cut the bottom of the cauli so it’s flat & remove leaves. Place in a large, lidded casserole dish
2. In an old jar, mix together 1/4 cup olive oil and all the spices, altering the amount of cayenne pepper to suit your spice preferences
3. Pour the spice mix over the cauli & rub it in a bit
4. Cover and bake at 180•C for 45 minutes to 1hr
5. Go & get ready/prep other food/watch an episode of Suits/have a bath
6. Remove the lid 10 minutes before serving to crisp it up
7. Serve & enjoy
TO MAKE A SAUCE:
- Remove the dish half way through the cooking time
- Add 1 can of tinned tomatoes & chickpeas to the base of the dish with some mixed herbs, fresh basil & black pepper (cut up aubergine is also a good addition)
- Cover and return to the oven
