Here’s a little dose of weekend baking inspo: the ultimate gooey cookie mix! I have used dovesfarm gluten free flour, however you can just as easily use plain flour and they work just as wonderfully. I made these last weekend when my friends trekked down to Cornwall to visit, topped half of them with leftover coffee buttercream, and they went down an absolute treat.
~makes between 15-20 cookies
INGREDIENTS:
- 1/2 cup butter
- 3/4 cup golden caster sugar
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 1.5 cups gluten free flour
- 1/2 tsp baking powder
- Pinch of salt
- 1/3 cup jumbo oats
- 1/3 cup roughly chopped walnuts
METHOD:
- Preheat the oven to 150oC and line a baking tray
- Cream together the butter and sugar
- Mix in the vanilla and eggs slowly
- Siege and fold in the flour and baking powder
- Fold in the salt, jumbo oats and walnuts
- Using a tablespoon measure, spoon into rough balls
- Bake for 8-12 minutes until golden brown
- Remove from the oven and leave to sit and harden slightly before transferring onto a cooking rack
