CHRISTMAS GRANOLA

In all honesty, this recipe came from a failed attempt at making Christmas cake-like oat bars which I ended up overcooking and ruining! BUT instead of throwing them away and pinning it as a failure – I broke them up in a jar and made granola. Surprisingly it turned out really well, so much so that I should have just told you that this was the plan from the outset!

So here it is, an accidental granola recipe to warm up your breakfasts/snacks in the final lead up to Christmas!

INGREDIENTS:

  • 2 cups rolled oats
  • 1/4 cup of mixed seeds (I used a combination of chia, sunflower, pumpkin, sesame) 
  • 1/2 cup currents or raisins, roughly chopped
  • 1/4 cup dried peel, roughly chopped
  • Thumb sized portion of roughly chopped stem ginger, or 1/2 tsp powder 
  • 2 tsp all spice
  • 1/4 tsp cinnamon 
  • Pinch of salt 
  • 3 tbsp butter or coconut oil 
  • 2 tbsp maple or golden syrup
  • 6 dried figs, blended into a paste

METHOD:

  1. In a bowl, combine all of the chopped fruit, spices, seeds and oats
  2. Place on a baking tray and bake for 5 minutes at 180oC
  3. In a saucepan, melt together the butter/oil, syrup and blended figs
  4. Remove the oat mix from the oven and combine with the liquid 
  5. Thoroughly mix, before spreading out on a lined baking tray
  6. Bake at 180oC for 15 minutes 
  7. Leave to cool before breaking it up and storing in a recycled old jar (or other airtight container)
