These few days in-between Christmas and New Year are quite odd ones. Do you get on with work for a couple of days? Do you stay in the festive spirit even though your tree is looking a bit tired? Are you still allowed to listen to carols? Do you continue to party every evening?So here is a super speedy, crowd pleasing recipe to serve up with your fancy Christmas crackers & pimped up bread sticks (or just some roasted pitta bread tbf!). And chickpeas are a fab way to squeeze some extra fibre & protein in your diet that is currently 80% chocolate orange!
INGREDIENTS:
- 1 can chickpeas, rinsed. Or 400g cooked chickpeas
- 4 tbsp lemon juice (fresh or bottled)
- 2-3 tbsp tahini
- 1 tbsp olive oil
- 1 tbsp oil from sundried tomatoes
- 6-8 sundried tomatoes
- 2 tsp smoked paprika
- 1 tsp cayenne pepper
- Salt + Pepper
METHOD:
1. Blend up all of the ingredients together, adding more or less spice to suit your taste
2. Serve with a drizzle of oil, a sprinkle chilli flakes and lots of crackers
